While thousands of apple varieties exist, only a dozen or so are marketed in France.
They have been scientifically selected for yield, uniformity, conservation, size and taste.
These varieties are ideal for large-scale marketing and chemical and industrial practices. On the other hand, there are old varieties with a strong genetic heritage that has evolved and adapted naturally to the local climate. They represent a heritage of terroir, flavors and genetics.
